Duck Fat Gravy

Duck Fat Gravy
yields: 6-8 servings

¼ pound rendered duck fat

½ cup diced shallot

3 tablespoons minced garlic 

2 cups warm chicken or turkey stock

2 tablespoons flour

1 tablespoon heavy cream 

2 sprigs thyme

1 fresh bay leaf

Salt and freshly ground black pepper, to taste 


Instructions: In a skillet, cook onions and garlic in duck fat over medium heat until translucent. Whisk in flour and cook until light brown over medium low heat. Add stock and heavy cream, whisking till smooth. Add the thyme and bay leaf and let simmer until gravy is thickened. Season with salt and pepper to taste.
